Anyway I thought I'd update with some news. A recent documentary I saw and loved was "Exit Through The Gift Shop," which I have been trying to see since it came out. It details the infamous street artist Banksy and h is documentarian, Mr. Brainwash (once you s  ee the movie please let me know if you think it is for real!). A documentary I wasn't so fond of was "I'm Still Here" about Joaquin Phoenix's entre into the hip hop music world. I think this is a well-pulled off stunt but basically, I don't care that you're still here, Joaquin. He makes himself out to be quite an annoying and slovenly jerk in this film.&lt;br /&gt;&lt;/div&gt;&lt;br /&gt;My new years resolutions are coming along better than expected- I have been working out on a regular basis and trying to keep things more organized (hanging my jacket up everyday proves to be a difficult task still though :-). The idea of running a 5 and maybe 10k in the spring have kept me motivated. I got the "couch to 5k" program on my ipod which is great. It tells you when to run and when to walk and basically progresses slowly over about 9 weeks. I'm on week 4 right now and loving that I can actually run outside occasionally now. I hope to not only do a race or two but to be able to run non-stop so I can cover more ground on all of the great trails and paths around here. I still have to put some books on my new nook color so that I can read for pleasure- I have many books on the list so whatever I can download free will be first.&lt;br /&gt;&lt;br /&gt;As far as food goes I've been trying a few new recipes, although I find myself so busy during the week that I often end up with quick and easy eats. Doing more cooking and prep work on the weekends is a new goal. I will never tire of salad with spinach, blue cheese, walnuts and dried cranberries though (that was lunch today).&lt;br /&gt;&lt;br /&gt;I took action and started a girl's craft group so this will help me harness my creativity (not that it is out of control) and spend some weeknight time socializing. We have our first get together Friday and I am excited to try cooking a new artisan bread from AB in 5. How can I make a proper chopped salad without it? I love Alfredo sauce (who doesn't?), but it really can't be a frequent part of any healthy diet. This recipe is really tasty and different and clocks in at about 130 calories a serving, a bit more if you add sauteed veggies. Of course it doesn't taste exactly like an authentic Alfredo, but it is satisfying.&lt;br /&gt;&lt;br /&gt;Serves 2 as a large main dish with leftovers.&lt;br /&gt;&lt;br /&gt;1 spaghetti squash, halved and seeded&lt;br /&gt;2 tbsp. Greek or plain yogurt (I used 2% Greek)&lt;br /&gt;2 wedges laughing cow cheese (I used original swiss flavor)&lt;br /&gt;1 clove garlic, minced&lt;br /&gt;salt and pepper&lt;br /&gt;olive oil&lt;br /&gt;any veggies you wish to include (I had an onion and pepper)&lt;br /&gt;&lt;br /&gt;1. Place squash cut side down in large dish. Add a few tablespoons of water and cover with plastic wrap. Microwave about 8 minutes, depending on the size of squash.&lt;br /&gt;2. Saute vegetables if using.&lt;br /&gt;3. Add garlic for the last minute of cooking.&lt;br /&gt;4. In a small bowl combine yogurt and cheese (you could add more spices here if desired).&lt;br /&gt;5. Microwave about 30 seconds and stir.&lt;br /&gt;6. Drizzle squash halves with olive oil and scrape strands into large bowl. Add salt and pepper to taste.&lt;br /&gt;7. I am aiming for once a week. I hope to include more interesting tidbits and not just recipes, although those are frequently what I get excited about, especially in the depths of winter.&lt;br /&gt;&lt;br /&gt;Along with updating, some of my resolutions are to read more for pleasure (this will be difficult with school but I am aiming for a book per month), stick to a budget, spend more time "doing," especially creative pursuits, and of course the all-encompassing "get in shape." One of my biggest frustrations is my failing to follow through on my goals. I start strong for a week or two and then completely fall off the wagon, whether it's something concrete like exercise or a simple change of attitude.&lt;br /&gt;&lt;br /&gt;As the article explains, I divided my goals by month. There are things I am planning for later in the year that I am keeping in mind, like running the Bolder Boulder 5K in May. But by taking it a month at a time I am less likely to get overwhelmed. I really like the Annie &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_2"&gt;Chun's&lt;/span&gt; &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_3"&gt;Udon&lt;/span&gt; noodle soup and these looked pretty good as well with few strange ingredients. They are very &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_4"&gt;convenient&lt;/span&gt; to make- add water and cook for 90 seconds, but they are not very tasty and not nearly worth the calories. I hate it when a &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_5"&gt;convenience&lt;/span&gt; lunch food like this gives calorie ratings as half servings. Who cooks a tiny lunch like this at work or school and then eats half of it? It misleadingly lists calories as 310, not bad for lunch, but 620 is ridiculous!! I would have never bought it had I noticed the half serving size. I could have just eaten two slices of pizza, but instead I ate over-salted plain noodles and am still hungry! These would be tolerable with added tofu and veggies and maybe half of the sauce packet (which is where I'm guessing all the calories come from) but who had time for that? Plus I could make a similar dish myself and it would be better and cheaper. This product looked and tasted nothing like the package promised. I will &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_6"&gt;definitely&lt;/span&gt; stick to the &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_7"&gt;udon&lt;/span&gt; soup when I feel like a sodium bomb of convenient "Asian" flavor. I am loving my new kitchen though- there's not much more counter space but there is way more space to move around and a dishwasher!&lt;br /&gt;&lt;br /&gt;I made a perfect ciabatta with grilled veggies, fresh pesto and mozzarella. It doesn't get much better for summertime- toss veggies (I used tomatoes, red onion, squash, zucchini and peppers) with olive oil, balsamic, salt and pepper and Italian seasoning and roast at 450, turning occasionally, for about half an hour. I used almost all bread flour in this batch and it had big air holes, a beautiful somewhat chewy crumb and a nice crisp golden crust. The sauce was lip-smacking good and if you don't "do" tempeh you can always sub tofu/seitan/chicken. I made this with soba noodles but rice would also be tasty. The recipe is from Vegetarian Times, March 2010.&lt;br /&gt;&lt;br /&gt;4 tsp. Hoisin sauce&lt;br /&gt;2.5 tsp. Rice vinegar&lt;br /&gt;1 T. soy sauce&lt;br /&gt;1 tsp. cornstarch&lt;br /&gt;1 T. veggie oil&lt;br /&gt;1.5 T. minced fresh ginger&lt;br /&gt;4 cloves garlic, minced&lt;br /&gt;1 pkg. tempeh, cubed&lt;br /&gt;1 12 oz. pkg. frozen whole baby green beans&lt;br /&gt;1/3 C. roasted, unsalted cashews&lt;br /&gt;&lt;br /&gt;1. Whisk hoisin, 2 tsp. rice vinegar, soy sauce, cornstarch and 1/2 C. water in bowl. Set aside.&lt;br /&gt;2. Heat oil in skillet or wok. Add ginger and garlic and stir-fry for a minute.&lt;br /&gt;3. Add tempeh and sauce to pan and stir. Cover, reduce heat to med-low and simmer a few minutes.&lt;br /&gt;4. Stir in green beans. Cover and simmer about 5 minutes.&lt;br /&gt;5. I am on the third batch now and it just keeps getting better. The taste can be a bit different at first if you're not used to it (commercial brands are often sweetened and flavored), but it is refreshing and healthy. It costs about $4 a bottle in a health food store-the whole setup for making your own is about $10 and it you get a gallon cycle after cycle for as long as you want. The process is fairly simple- you just need a few supplies and patience.&lt;br /&gt;&lt;br /&gt;The first thing you need is a vessel to brew in- after much research I went with a $7 sun tea jar which can be purchased from any hardware store or online. You must brew the tea in a glass container as it can leach contaminants from plastic or metal. The sun tea jar has a spigot which makes it much easier for bottling the finished tea. The tea becomes fermented by the addition of a funky looking mass of microrganisms often referred to as a "mushroom," "mother" or " "scoby (Symbiotic Colony of Bacteria and Yeast)."  I procured a "mother" culture from a kind woman off of Freecycle (craigslist may work as well but I find the people on freecycle to be less flaky and creepy). She gave me a culture and a fair bit of "starter tea" (this is just previously brewed kombucha that helps balance the pH of the new batch- a mother can live in kombucha in the fridge for up to 6 months). The rest of the process goes like this:&lt;br /&gt;&lt;br /&gt;1. Clean and sterilize everything the tea will come in contact with- utensils, container, pot, hands.&lt;br /&gt;2. For 1 gallon of tea I boiled 2 quarts of water.&lt;br /&gt;3. Turn heat off and steep 5-6 tea bags for about 15 minutes (many people use black tea- you can use black, green or white but not herbal teas or earl grey- I use 3 bags of black and 3 bags of green).&lt;br /&gt;4. Mix in 1 C. Sugar (this is what the culture "eats" as it ferments)&lt;br /&gt;5. Let the tea cool for at least two hours or overnight (this is very Important! Hot tea will kill the mother)&lt;br /&gt;6. To speed up the cooling process I mix in 1 or so quarts cold water with the tea in the jar. Fill jar up to about 3 quarters with tea.&lt;br /&gt;7. Add starter tea and then with clean hands carefully place the mother on top.&lt;br /&gt;8. Cover with clean cotton cloth (not cheesecloth as bugs can get in) and secure with rubber band.&lt;br /&gt;9. Place somewhere away from direct sunlight where it is relatively warm (the warmer the temperature the faster the tea will ferment).&lt;br /&gt;10. Sample tea after about 5 days- if it is still sweet it's not done yet. It will start to develop a vinegar like taste- at that point it is a matter of personal preference how long you want to continue brewing for. I have bottled mine after about 10 days and it has a cider-like taste. You can leave it for as long as you like, and if you want to get really serious you can test it's pH for the optimal level of 2 to 3.5.&lt;br /&gt;&lt;br /&gt;To Bottle:&lt;br /&gt;I start steeping the next batch of tea before I bottle- that way it is ready to go by the time I am done.&lt;br /&gt;1. A "baby" scoby will have formed on top of the mother. You can use this new culture for the next batch. You can discard the mother, save it as a backup or give it to a friend (just remember to leave some of the tea with it). A new baby will form each brewing cycle.&lt;br /&gt;2. Pour tea into glass bottles of your choice (swing top bottles can create more carbonation) leaving about a tenth of liquid as starter for your next batch.&lt;br /&gt;-If you wish to flavor the tea put flavoring in first (grated ginger, fruit, juice etc.)&lt;br /&gt;3. Leave bottles at room temperature for a few days to flavor, the place in fridge and enjoy!&lt;br /&gt;&lt;br /&gt;*I have read that putting a few raisins in the bottles makes the tea more fizzy but I haven't tried it yet. Anyway, I was hooked. I get them now wherever I can- the local coffee shop Dewey's in Cleveland makes a tasty, almost milkshake version. Since I indulged in this tasty treat I have been on the search for the main ingredient: Matcha green tea powder. It is a finely ground premium green tea used ceremonially in Japan. The preparation for a traditional Matcha is rather complicated- it is brewed using particular tea bowls and swirling motions.&lt;br /&gt;&lt;br /&gt;I have searched every grocery store and health food store in both Cleveland and Boulder for this. It arrived yesterday in a big pouch, complete with recipes for traditional Matcha, frappes, lattes, green tea pudding and GREEN TEA TIRAMISU! The tea is so fine you can use it for baking. It surely works for green tea ice cream as well if you have an ice cream maker (you lucky fool!).This morning I blended a teaspoon with a little hot water, then added soy milk, vanilla frozen yogurt and protein powder for a delicious smoothie. It's one of the many accompaniment recipes. It is delicious served with any home made crusty bread and makes a great appetizer. I adapted this a bit to make it faster.&lt;br /&gt;&lt;br /&gt;1 16 oz. can  white northern or cannellini beans&lt;br /&gt;1 roasted red bell pepper&lt;br /&gt;1 large clove roasted garlic (or smaller fresh clove but garlic taste will be stronger)&lt;br /&gt;2 T. olive oil&lt;br /&gt;1 tsp. salt&lt;br /&gt;fresh ground pepper&lt;br /&gt;10 fresh basil leaves&lt;br /&gt;&lt;br /&gt;1. It goes into detail about the whole baking process of the bread and every recipe in it sounds amazing (I will post all those I try). I have been trying to adjust my recipe for high altitude to get a less dense loaf that rises more. I used only 1 tbsp. yeast this past time and it was more airy. I think I will try bread flour, and possibly vital wheat gluten next. The loaves are still fairly flat, not the size of sandwich bread, but there is a recipe in the book for a loaf pan version which could very well replace the need for store bought sandwich bread. Use or refrigerate up to two weeks. On baking day, scoop out grapefruit size chunk.&lt;br /&gt;-Shape dough into ball, pulling top around to form cloak. Allow to rest on cornmeal covered pizza peel for 40 minutes. Preheat oven at 450 with stone and broiler pan.&lt;br /&gt;-Slide bread onto stone, pour 1 c. hot water into pan underneath and bake about 35 minutes.&lt;br /&gt;&lt;br /&gt;I think the addition of wheat and other flour makes a tastier bread.&lt;br /&gt;I stretched this dough out using lots of flour and made a huge spinach and cheese calzone.&lt;br /&gt;&lt;br /&gt;I am almost fully equipped for these baking adventures. Instead of a baking stone, I invested in a Lodge cast-iron pizza pan: &lt;a href="http://www.amazon.com/Lodge-Pro-Logic-Pizza-Pan/dp/B0000E2V3X"&gt;http://www.amazon.com/Lodge-Pro-Logic-Pizza-Pan/dp/B0000E2V3X&lt;/a&gt; . The reviews were all stellar and unlike baking stones, it can't break. It can also be used on the stove as a griddle pan and can be used in the oven for bread, pizza, biscuits- just about anything. It came pre-seasoned and I'm very pleased with it so far. I have made two pizzas now with the basic pizza dough recipe:&lt;br /&gt;&lt;br /&gt;2 3/4 cups lukewarm water&lt;br /&gt;1 1/2 tbl granulated yeast&lt;br /&gt;1 1/2 tbl salt&lt;br /&gt;1 tbl sugar&lt;br /&gt;1/4 cup extra virgin olive oil&lt;br /&gt;6 1/2 cups unbleached all-purpose flour&lt;br /&gt;&lt;br /&gt;1. Mix first 5 ingredients with wooden spoon.&lt;br /&gt;2. Gradually mix in yeast.&lt;br /&gt;3. Same as the bread, allow to rest in non-airtight container for a few hours. This makes about 4 pizzas. Before using, pinch off grapefruit sized piece form into ball and let rest on counter at least 30 minutes.&lt;br /&gt;4. Preheat oven to 500.&lt;br /&gt;5. Stretch and roll out with hands or dusted rolling pin, using cornmeal and flour to prevent sticking.&lt;br /&gt;6. Top pizza and bake about 7-10 minutes, keeping an eye for crust to turn golden.&lt;br /&gt;&lt;br /&gt;My kitchen is not yet equipped with a pizza peel OR a baking stone, so the first time I ended up with the dough sticking to my cutting board. I ended up dusting a cookie sheet with cornmeal and making the pizza directly on it. Normally, you prepare the pizza on the peel while the sheet or stone heats in the oven so the pizza cooks faster and more even. A little bit of the crust stuck when it came out but all in all it worked out ok and was delicious! A decent frozen pizza seems to run between $6 and $10 and these, depending on ingredients used are more like $4 and much tastier.&lt;br /&gt;I made a mushroom/spinach/fresh mozzarella and an "eggplant parm" pizza with oven baked breaded eggplant, homemade tomato sauce, Italian cheese blend and fresh tomatoes. If you do use a cheese like fresh mozzarella, be sure to top pizza for only last minute of baking or it will melt to much (as mine did). I am completely hooked- it is SO easy and SO delicious. I was always intimidated by homemade bread, mainly because of the time involved. This recipe takes about 10 minutes on the day you mix it, and then 5 minutes of preparation on the day you bake it. It makes enough for 8 loaves (I halved it) and keeps in the fridge for 2 weeks. You just slice off a hunk every time you feel like fresh baked bread and then it's ready in a little more than an hour.&lt;br /&gt;&lt;br /&gt;EQUIPMENT:&lt;br /&gt;&lt;br /&gt;Pizza stone or baking sheet&lt;br /&gt;1 cup measuring cup&lt;br /&gt;1 Tablespoon measure&lt;br /&gt;Flat shallow metal pan- a broiler tray or large cake pan works great&lt;br /&gt;Serrated bread knife&lt;br /&gt;A large bin, bucket, or tub with a NON-AIRTIGHT lid for the dough.&lt;br /&gt;Pizza peel or rimless cutting board&lt;br /&gt;&lt;br /&gt;INGREDIENTS:&lt;br /&gt;&lt;br /&gt;6 C.  Lukewarm Water&lt;br /&gt;3 Tablespoons/28g   Active Dry Yeast, or four packets&lt;br /&gt;3 Tablespoons/50g   Kosher or flake salt&lt;br /&gt;13 C.  All-Purpose Unbleached Flour (I use high altitude flour)&lt;br /&gt;&lt;p&gt;1) Put water, yeast and salt into 5-quart bowl or container.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;2) Mix in the level scoops of flour. Mix with a wooden spoon or very wet hands until uniformly moist.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;3) Cover loosely and leave out about two hours. You can use a portion of the dough any time after this period. Refrigerated wet dough is less sticky and easier to work with than room-temperature dough.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;4) Sprinkle pizza peel/cutting board with cornmeal.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;5) Coat hands with flour and sprinkle the surface of the dough with flour, then cut off a 1-pound (grapefruit-sized) piece with a serrated knife. Gently stretch the surface of the dough around to the bottom creating a "cloak," until the bottom is a collection of four bunched ends.  The bottom of the loaf will flatten out during resting and baking.&lt;/p&gt;&lt;p&gt;6) Place the ball on the pizza peel. Let it rest uncovered for about 40 minutes.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;7) Twenty minutes before baking, preheat oven to 450 degrees with a baking stone/pan on the middle rack. Place an empty broiler tray for holding water on lower rack.&lt;/p&gt;&lt;p&gt;8) Dust the top of the loaf liberally with flour, which will allow you to slash the loaf with the serrated knife. Slash a 1⁄4-inch-deep cross, scallop or tick-tack-toe pattern into the top. (This helps the bread expand during baking.)&lt;/p&gt;&lt;p&gt;9) Slide bread onto heated stone/baking sheet in oven. Quickly pour about a cup of hot water into the broiler tray and close the oven door to trap the steam. Bake for about 35 minutes, or until the crust is browned and firm to the touch, and loaf sounds hollow when tapped on bottom. Allow to cool (if you can resist) before slicing.&lt;br /&gt;&lt;/p&gt;&lt;p&gt;10) Refrigerate the remaining dough in your lidded container and use it over the next two weeks. Cut off and shape loaves as you need them. I had a hard time working on a new year's resolution this year. Usually it's to get in shape but I have been going to the gym pretty regularly and snowboarding keeps my high-altitude endurance in condition. The only thing I could come up with is to spend less time dwindling away on the computer (haha as I type this) and more time being creative, reading, hanging out with folks etc. I also want to try cooking new things but that is a constant in my life. Here's a hearty, sinfully good Indian recipe to start the year off right. This is a recipe from my friend Richelle who has more experience cooking Indian than I do. Although we made this together originally I managed to do it on my own and it came out great- just like it's from a restaurant.&lt;br /&gt;&lt;div class="GBThreadMessageRow_Body"&gt;&lt;div class="GBThreadMessageRow_Body_Content"&gt;&lt;br /&gt;1 package fried paneer (Indian grocery store)&lt;br /&gt;heavy cream (about 1/4 C.)&lt;br /&gt;1/3 cup kasuri methi leaves (Indian grocery store)&lt;br /&gt;1-3 clove garlic&lt;br /&gt;egg-sized piece of fresh ginger&lt;br /&gt;16 oz. frozen peas&lt;br /&gt;2 white onions, chopped&lt;br /&gt;1/2 cup oil or ghee&lt;br /&gt;1 tsp turmeric&lt;br /&gt;10 oz canned crushed tomatoes&lt;br /&gt;salt and sugar&lt;br /&gt;&lt;br /&gt;1. In food processor or by hand finely mince garlic and ginger.&lt;br /&gt;2. Coat large pan with oil and place on medium heat.&lt;br /&gt;3. Add onion, keep covered and stir.&lt;br /&gt;4. Increase heat slightly and make sure there is enough oil.&lt;br /&gt;5. Cover pan and allow onion to soften.&lt;br /&gt;6. Add garlic and ginger paste and a pinch of sugar and salt.&lt;br /&gt;7. Fry for a few minutes, until lightly browned.&lt;br /&gt;8. Add turmeric.&lt;br /&gt;(at this point, you can leave it on low heat for a long time, or add a little more oil and increase heat to make it faster)&lt;br /&gt;9. When onion is mushy and oil has separated, add the tomatoes.&lt;br /&gt;10. Turn heat to low and keep covered.&lt;br /&gt;11. Cook until dry, like a paste. Then add 1/2 C. water and bring to boil.&lt;br /&gt;12. Add methi leaves.&lt;br /&gt;13. Lower heat and add paneer, peas, and some cream.&lt;br /&gt;14. Before serving, add enough cream to cover, and heat again.&lt;br /&gt;&lt;br /&gt;I served this with warm store-bought garlic nan. Many recipes online add other spices like garam masala and coriander. I thought this was spiced perfectly although it is mild. I thought I would share my opinions on a few great frozen lunches I've tried recently. While I prefer fresh food or leftovers for lunch, I keep a stock of a few entrees in the freezer in case there is nothing else on hand. Often times I will incorporate a previous night's dinner into a lunch- roasted veggies mixed with goat cheese or brie and put in a wrap, cheese, cucumber and sun dried tomato sandwich, etc. Other times I pair a pack of frozen vegetables (Green Giant Simply Steam boxes are amazing!) with an Amy's frozen burrito (the best brand I've tried) or a small wrap.&lt;br /&gt;&lt;br /&gt;As a die-hard Kashi fan I picked up a few entrees to try. My absolute favorite is the &lt;span style="font-weight: bold;"&gt;Mayan Harvest Bake&lt;/span&gt;. It is an incredibly sweet and spicy mix of unusual ingredients, and a nice diversion from the usual burrito/pizza lunch fare. This dish is made up of plantains and roasted sweet potato, black beans and kale, and its covered with a spicy ancho sauce and pumpkin seed garnish, all served over seven whole grain polenta and amaranth. Some seriously fancy stuff for a frozen lunch that I can buy for less than $4 (oftentimes these are on sale at the King Soopers here). This amazing concoction clocks in at 340 calories, 9 g fat, 8 g fiber and 9 g protein. Also low in sodium for frozen food at 380 mg (16% DV).&lt;br /&gt;&lt;br /&gt;I also tried the &lt;span style="font-weight: bold;"&gt;Ranchero beans&lt;/span&gt;, &lt;span style="font-weight: bold;"&gt;Black Bean Mango&lt;/span&gt; and &lt;span style="font-weight: bold;"&gt;Tuscan Vegetable Bake&lt;/span&gt;. The bean dishes are decent, especially the Mango. The Tuscan bake is a little bland. I added some spice to all of these but they still are far superior and healthier than most other meals on the market.&lt;br /&gt;&lt;br /&gt;Lean cuisine meals are slightly cheaper than Kashi and often on sale, so I tried a few of these as well. My old standby is the &lt;span style="font-weight: bold;"&gt;macaroni and cheese&lt;/span&gt;. I mix in frozen veggies (peas or broccoli usually) and it is fairly filling and healthy, though high in sodium. (290 calories, 7 g fat, 15 g protein).&lt;br /&gt;The &lt;span style="font-weight: bold;"&gt;butternut squash ravioli&lt;/span&gt; is tasty but a pretty skimpy portion for an entire lunch, though higher in fiber and lower in sodium than the mac and cheese.&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Lean cuisine pizzas&lt;/span&gt; are surprisingly good for cooking in about 4 minutes. They come with a crisping tray, an ingenious way to get a microwave pizza fairly crispy. I've tried the roasted vegetable and spinach and mushroom  "deep dish" varieties. The roasted veggie was pretty tasty and had a decent amount of veggies on it. The spinach was a little soggy and there weren't man mushrooms on the other kind. They have decent prices on a lot of my staples, like kashi cereals and morningstar farms products. I also enjoy their generic store brand, Archer Farms. I picked up a new kashi cereal called "Honey Sunshine," and an Archer Farms cereal called "Cinnamon start with protein." Generally we only buy kashi Golean, as it is chock full of protein and fiber and keeps you full until lunch, but I was getting fairly sick of this twiggy cereal though so I thought I'd branch out.&lt;br /&gt;&lt;br /&gt;Both of these cereals are very tasty and make a great breakfast or snack. The Honey Sunshine has an appreciable nutrition content: 100 cal/1.5 g. fat/6 g. fiber/2 g. protein. I've been looking for an easy pre-workout snack and I think this would be great, with or without milk. It's best to avoid slow-digesting whole grain before a workout, but it's low enough in protein and fiber that I think it would be alright about an hour before the gym. The Cinnamon start cereal tastes exactly like cinnamon toast crunch, a beloved childhood favorite of mine. But unlike the sugar-loaded kids' cereal, this packs a nutritional punch with 190 cal/2 g. fat/4 g. fiber and an astounding 15 g. protein (not really sure where that is coming from).&lt;br /&gt;&lt;br /&gt;The best thing about these cereals is the dessert I just concocted- sprinkling a little of each over a half cup of Dreyer's (Breyer's on the east coast) yogurt blends vanilla frozen yogurt. It tasted like a cinnamon filled fried ice cream and was a very filling evening snack for about 150 calories. The $6 entrance fee was well worth it. We did an easy 2.8 mile &lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://3.bp.blogspot.com/_zjBN9w6JukI/SvDOtiSG5pI/AAAAAAAAAFQ/ROninYgXY8w/s1600-h/IMG_0916.jpg"&gt;&lt;img style="margin: 0pt 0pt 10px 10px; float: right; cursor: pointer; width: 200px; height: 150px;" src="http://3.bp.blogspot.com/_zjBN9w6JukI/SvDOtiSG5pI/AAAAAAAAAFQ/ROninYgXY8w/s200/IMG_0916.jpg" alt="" id="BLOGGER_PHOTO_ID_5400043234909415058" border="0" /&gt;&lt;/a&gt;hike up Rattlesnake Gulch Trail to the ruins of the Crags Hotel, which burned down in 1912. The trail follows and old wagon road and leads past beautiful views of the canyon. The ruins of the hotel are not that impressive, but it does give one a deep sense of history standing in the former hotel fountain and looking out what was once a window with a sweeping panoramic view. I am a huge fan of ghost towns and historic ruins so this place was a big hit for me. There are pottery shards and glass littered all over the ground so that it literally sparkles in places. Further past the hotel ruins there is a gorgeous view of the continental divide, which made a great lunch spot for us. It is also fun to watch the multitude of rock climbers make there way up the park's many cliff faces. Wild mushrooms are my favorite and they really shine in this risotto. I served mine with oven baked Quorn cutlets (my usual substitute for chicken). Defrosted Quorn is easily breaded, topped with a little parmesan and baked for about 20 minutes. Recipe from recipezaar.com.&lt;br /&gt;&lt;ul&gt;&lt;li&gt;          5 1/2 cups chicken broth (I used veg. broth, and you may not need this much)&lt;a href="http://www.recipezaar.com/library/broth-154"&gt;&lt;/a&gt;    &lt;/li&gt;&lt;li&gt; 3 tablespoons butter &lt;span style="text-decoration: underline;"&gt;&lt;/span&gt;    &lt;/li&gt;&lt;li&gt; 3 tablespoons olive oil &lt;span style="text-decoration: underline;"&gt;&lt;/span&gt;&lt;/li&gt;&lt;li&gt;&lt;span style="text-decoration: underline;"&gt;&lt;/span&gt;2 shallots, chopped    &lt;/li&gt;&lt;li&gt; 1 lb wild mushroom, sliced (oyster, crimini, shiitake)    &lt;/li&gt;&lt;li&gt; 1 cup arborio rice &lt;a href="http://www.recipezaar.com/library/arborio-rice-5"&gt;&lt;/a&gt;    &lt;/li&gt;&lt;li&gt; 1/2 cup dry sherry (I used dry white cooking wine)    &lt;/li&gt;&lt;li&gt; 1/2 cup parmesan cheese, freshly grated (about 2 oz)    &lt;/li&gt;&lt;li&gt; 3/4 teaspoon fresh thyme&lt;a href="http://www.recipezaar.com/library/thyme-348"&gt;&lt;/a&gt;, chopped        &lt;/li&gt;&lt;/ul&gt;&lt;ol&gt;&lt;li&gt;Bring chicken broth to simmer in medium saucepan.  Reduce heat to low; cover and keep broth hot.&lt;/li&gt;&lt;li&gt;Melt 3 tbsp butter with olive oil in heavy large saucepan over medium heat. Add chopped shallots; sauté 1 minute.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Add wild mushrooms; cook until mushrooms are tender and juices are released, about 8 minutes. Add rice and stir to coat.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Add sherry and simmer until liquid is absorbed, stirring frequently, about 8 minutes. Increase heat to medium-high. Add 3/4 cup hot chicken broth and simmer until absorbed, stirring frequently.&lt;br /&gt;&lt;/li&gt;&lt;li&gt;Add remaining hot chicken broth 3/4 cup at a time, allowing broth to be absorbed before adding more and stirring frequently until rice is just tender and mixture is creamy, about 20 minutes. Stir in Parmesan cheese and chopped fresh thyme. In the past I've had trouble getting the breading to stick to baked eggplant, and frying it is just way too greasy. This is a really easy recipe and it comes out tasting like deep fried eggplant. I cooked some zucchini in the same way and topped some pasta with the veggies, marinara, parmesan and fresh basil. I find myself making a lot of comfort food lately- most recently, a variation on grilled cheese and tomato soup, a favorite old standby. I like the hearty tomato-bisque style soups by Amy's and Wolfgang Puck, but these can be pricey. So I picked up a can of Campbell's this time, but instead of water I used fat-free half and half (it says on the can that you can use milk, and since I only drink soymilk I figured this would work). With some basil stirred in this made a tasty, creamy and cheap soup. I am always reading reviews of new snack products online and in magazines, searching for the perfect balance of nutrition, taste and satiating factor. I tend to eat one snack in the morning and one in the afternoon, and appreciate something convenient and fast. Here are reviews of a few snack bars I've tried recently-&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Kashi- I love pretty much everything this company makes, and I feel safe buying it because it never contains much of the crap you find in everything else: sugar, high fructose corn syrup, artificial coloring and flavor etc. Their products taste like they are good for you because they are made with high quality ingredients (hence the slightly higher price than the average General Mills/Kraft products. I tried the TLC fruit and grain pumpkin pie bar and the TLC baked apple spice cereal bar. The pumpkin bar has a good crunch and a nice mixture of flavors and textures. I am a pumpkin fan so I enjoyed it, and it has 4 g. of protein and fiber, not bad for 120 calories.&lt;/div&gt;&lt;div&gt;The apple bar was softer and had a nice flavor but is a bit too sweet for my taste. Not bad at 3 g. fiber, 2 g. protein and 110 calories. However  sweet this bar is it's got nothing on Fiber One's oats and apple streusel bar. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Fiber One- I should have known by looking at the ingredients, being that sugar appears 3 times in the list, in addition to HFCS and high maltose corn syrup (?). I would eat this as more of a candy bar than a healthy mid-morning snack. However, it somehow has 9 g. of fiber so it is filling. It could use about half the sugar and more protein (it has 2 g.). This bar has 130 calories.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I still enjoy my old standby, Nature Valley crunchy granola bars in oats and honey, cinnamon and peanut butter, but these have more calories, fat and sugar, and less fiber. We were a little late for the Aspens but still saw some pretty foliage&lt;br /&gt;&lt;/div&gt;on the drive up. We went to the ultra popular Bear Lake area for a nice 3.6 mile hike. Starting at Bear Lake, which many people just walk around, we hiked up to a lunch spot at Nymph lake, which is normally covered with lily pads but was already frozen over.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;From there we continued on to Dream Lake and then up to Emerald Lake, an aptly named deep green lake nestled at the bottom of the intimidating Hallett Peak. It's easy to see why this is one of the most popular hikes in the park. I think this is about far more than documenting what she eats- there is a small expression at the bottom of each photo that seems to fit perfectly with the image. Concentrating on one subject every day is a great way to perfect your craft. Maybe I will only photograph umbrellas from now on...&lt;br /&gt;&lt;br /&gt;On a similar note, Jay recently started taking a self-portrait everyday on his laptop. This is very easy to do now, since we use our computers everyday and taking a photo is one mouse click of effort. I've always been fascinated with those slideshows of a year's worth of someone's face. There are bound to be subtle changes everyday. Chop tomatoes and place in bowl with juices. Add mozzarella, olive oil, garlic, salt and pepper. Let sit while you cook the pasta (the longer the better).&lt;br /&gt;2. Cook pasta al dente.&lt;br /&gt;3. Add basil to tomato mixture, stir and check seasoning.&lt;br /&gt;4. Preheat oven 400. Heat margarine and fry onion until soft. Add tomatoes, pepper and chives and cook about 5 min.&lt;br /&gt;2. Add pear, peaches and lentils and mix well. Sprinkle some sugar and pour wine to taste. Add cinnamon then season.&lt;br /&gt;3. Roll out pastry and make circles about 4 in. diameter (you can use a bowl and trace around it).&lt;br /&gt;4. Put some filling on half of circle, then moisten edges with water. Fold over and press together with fork. Poke a few holes to let steam escape. (I also brush pastry with a little melted butter).&lt;br /&gt;5. Cook lentils and potatoes in boiling water 10-20 minutes or until soft, drain.&lt;br /&gt;2. Heat oil in pan and add onion, garlic and bell pepper. Cook until soft, then add spiced. Continue to cook for a 1-2 minutes before adding tomatoes.&lt;br /&gt;3. Let mixture cook for a further minute or so, then add lentils and potatoes. Simmer gently for 5-10 minutes and check seasoning. We started at Camp Dick, fairly close to Nederland, CO and about 8500 ft. elevation. From there we hiked up through a cool forest for about 4 miles until the trail opened up into a meadow full of wildflowers. Steep, rocky cliffs that seemed to be mid-crumble surround the meadow. We continued into the actual wilderness area and were soon rewarded with views of snow-capped peaks. The trail follows a fast-flowing creek and passes a rocky outcrop with views of a waterfall. At about 9800 ft. we headed up a fork in the trail to Red Deer lake. We have tubed Boulder Creek- an exhilarating trip and gone on a few local hikes and one backpacking trip so far.&lt;br /&gt;The first hike we did was the Canyon Loop Trail in the Betasso Preserve. 3.2 Miles- pretty easy. There were great views of Boulder and beyond and the trail winds through shady forests and into open vistas.&lt;br /&gt;We hiked the Anne U. White Trail- also an easy trek, about 3 miles in Fourmile Canyon. It was shady and cool, and also very easy to get to.&lt;br /&gt;&lt;div style="text-align: left;"&gt;The First Flatiron hike was a great trip. It starts in Chautauqua park and heads up a wide gravel road into switchbacks that pass through forest. There were several rock climbers tackling the mini Flatiron. But you, whoever you are, GO READ the book "The Lost City of Z" by David Grann. A great adventure story with history, science and anthropology thrown in the mix, it tells the story of one of the greatest exploration mysteries- the disappearance of Percy Fawcett and his party during their search for Z, a supposed Eldorado-like lost civilization in the Amazon. One thing becomes clear early on- the Amazon is a place where everything in nature it set against humankind-the bugs, the reptiles, the fish, the "native savages", the weather etc. I greedily devour exploration tales- Krakauer is a favorite and I am searching for a copy of Shackleton. Recently I purchased a bag of them, since Trader Joe's only sells them 4 or 5 to a bag (how inconvenient, really). So I've found myself with excess avocados, but there really is no such thing. My only issue is that it takes them a few days to ripen, and now of course they are all ripe at once and must be eaten soon. I think I am up to the task, however. Last night we threw one in a salad-it lends a nice, mellow, creamy texture to contrast with crisp lettuce and veggies. Today I made a sandwich with low-fat cream cheese, veggie morningstar bacon and avocado (lettuce and tomatoes were not around but they'd be good in there too). What a satisfying concoction! I mashed up the leftover parts with some 3-pepper salsa and ate with tortilla chips. Can't let any go to waste! Tonight I plan on making a pizza with cheddar and swiss, veggie bacon and of course the last two avocados! Sorry for this little ode- my love is too great to keep silent. Thank you avocado for your spicy guacamole, beautiful color and creamy goodness. And they say you are a "healthy fat"- while I've never quite understood those, I can feel less guilty about gobbling you up several times a week! This park has a weird vibe about it, possibly due to urban legends involving occult rituals and Satanism and the supposed fact that David Berkowitz, or the Son of Sam serial killer, hung out there and  murdered dogs there, as he lived across the street. &lt;br /&gt;     Anyway, it was still a beautiful day so we took a stroll to the "Eagle's nest," a stone portico overlooking the Hudson. Apparently this park, while it claims to close at dusk, has no enforcement whatsoever because the place is a literal trash dump of beer cans and broken glass. We wandered down amongst this debris and I decided to make the most of the glass graveyard. I began constructing a small mosaic, which I thought looked rather pretty glistening in the midday sun. As it was getting cold, I did not spend as much time on this endeavor as I should have, and hope to possibly go back and create more of a permanent "installation." I have always been a fan of street art, and greatly admire my s.o.'s various projects, but I had never thought of using trash and other "found objects" to create art. I was very impressed- by the acting and directing, but also the use of bushy-eyebrowed, cockeyed glances to build suspense. For instance, for the entire first 10 minutes or so of the film there is no dialogue. It is fun to impart one's own dialogue into these scenes, as everything transpires with a stone-cold stare from under a wide-brimmed hat.The music really makes this movie, and also becomes stuck in your head for the remainder of the evening. If only all of life's encounters were scored so dramatically.  I also love the costumes- Clint Eastwood's coattails billowing in the wind, the spurs that give away the sneak attack, the ponchos. I awoke today feeling stuffy and a little out of it, but shrugged it off to a poor night's sleep. As the day progressed, my throat became more sore and now it is ragingly painful. Otherwise I have no symptoms, besides general fatigue/achy. To top this off, tomorrow is my first day of work at a new job! (Trader Joe's). I am trying to think positive and bolster my immunity with healthy thoughts.&lt;a onblur="try {parent.deselectBloggerImageGracefully();} catch(e) {}" href="http://www.filmofilia.com/wp-content/uploads/2008/10/my_bloody_valentine_3d_m.jpg"&gt;&lt;img style="margin: 0pt 0pt 10px 10px; float: right; cursor: pointer; width: 251px; height: 156px;" src="http://www.filmofilia.com/wp-content/uploads/2008/10/my_bloody_valentine_3d_m.jpg" alt="" border="0" /&gt;&lt;/a&gt;&lt;br /&gt;   On another note, I recently saw "My Bloody Valentine" in glorious 3-D. The ticket was close to $15, but I have to say it was more of a cinematic "experience" than most films nowadays. Sure, it played the 3-D gimmick for all it was worth, but isn't that what my hard-earned (or in this case boyfriend's) hard earned money is for? I mean, how often does one get to dodge a pick axe flying at their face, or cringe as some poor teen's blood drips off the screen? Cinema at its best folks. We gave our folks a call, more as a joke than anything else, to ensure tornadoes were not in the forecast. However, it turns out that there were lots of them, all around us, and headed straight for us. We pulled into a gas station to get Quizno's and see what was up. As my sandwich is being made, Jay is putting gas in the car, which he says was literally tilting off the ground with the wind. My sandwich is taking an eternity to roll through the toaster, and I catch glimpses of a TV with a radar map of the area, covered in bright red dots, with a rolling WARNING banner across the bottom of the screen. Then, a truck with yellow sirens pulls up. The driver, a storm-chaser tells Jay and all others to "get out of here right now and go east or south". Sheer panic sets in and all the occupants of the gas station, minus the poor Quiznos workers, scream and run flailing to their cars. My sub finally rolls out of the toaster and I pace...should I just leave it? I pay the kid at the register and run to the car, beginning to seriously freak out when I see the sky and feel the wind. I call my dad, who tells me there is indeed a hell of a storm where we are headed. We follow a road which turns into a dirt road, and end up in a field where the grass is literally bent over sideways, like something out of the movie Twister...not where we want to be. Finally we find our way to an east-heading highway and check into a motel in Salina, Kansas. All the ground floor rooms are taken, of course, save for a smoking room. The desk person tells me to get in the shower, as there are no basements. The TV is telling us to seek shelter, so in a fit of complete hysteria I sit in the shower for several minutes, which only made me more distraught. Eventually, we put on "Good Will Hunting" and watched it amidst very loud thunder and wind. I awake to find my car in one piece, and our trip officially under way.&lt;br /&gt;&lt;br /&gt;Rocky Mountain National Park&lt;br /&gt;We got a  gorgeous campsite in Moraine Park Campground with a clear view of Long's Peak. We did several great hikes, one of which, Bierstadt lake, we saw a female moose and two young moose. Lots of Elk as well. A drive up Trail Ridge road gave us a glimpse into the tundra- there are few places you can drive at 13,000 + feet and get out to take a stroll.&lt;br /&gt;&lt;br /&gt;Black Canyon of the Gunnison&lt;br /&gt;We did an awesome 7 mile out and back hike on the north rim's North Vista Trail. We could see 3 mountain ranges from the top of Green Mountain. We drove down into the canyon (frightening and incredible) and camped at East Portal campground. We saw a huge Bullsnake, mule deer, hawks.&lt;br /&gt;&lt;br /&gt;Arches National Park&lt;br /&gt;Words cannot describe this otherworldy landscape. We did the classic Delicate Arch hike, windows loop and Double Arch hike. It was fun to scramble up the sandstone. We watched a gorgeous sunset gradually turn the stone a myriad of colors. We went mountain biking on the Klondike Bluffs Trail near Moab. It was very tough but had great views of the area, as well as dinosaur tracks frozen in the stone.&lt;br /&gt;&lt;br /&gt;Canyonland National Park&lt;br /&gt;We saw an amazing lookout point in the "Island of the Sky" where the Green and Colorado rivers converge. We did several fun, short hikes to Mesa Arch, Upheaval Dome and Cave Spring. We did an overnight venture into the Needles, amazing rock-spire formations.
